Vieiras a la huancaina

  • 2 dozen fan shells
  • 4 lemons
  • 4 yellow peppers
  • 1/2 red onion
  • 100 gr of fresh cheese
  • 1/2 package of soda crackers
  • 1/2 cup of evaporated milk
  • 30 ml of vegetable oil
  • Salt and pepper to taste
  • 100g butter


Remove the fan shells from their valves and wash them well. Reserve them in the refrigerator.

To prepare the huancaína, roast the ginned and deveined peppers together with the chopped onion. Blend the peppers and onion together with the cheese, the cookies and the milk. Pour in the vegetable oil little by little to emulsify the preparation. Season with salt and pepper. Marinate the shells in the lemon juice, salt and pepper and arrange each one on its shell. Cover with the huancaína sauce. Gratin in the oven until golden brown. (Recetas y sabores, 2013)
