This process occurs after a continuous biometrical monitoring of our scallop population. Having the correct timing is crucial to harvest mature scallops for roe on presentations. External factors such as water temperature, currents and moon phase are carefully followed and forecasted.
Our scallops are harvested with hydraulic cranes or manually with the aid of professional divers. Fresh scallops are placed inside plastic boxes and transported in speed boats to the pier.
After, they are stacked into isothermal trucks with flaked ice for transportation to the processing plant.
The harvest process is carried out under the supervision of the National Sanitary Authority (ITP), our Quality Assurement Staff and private laboratories.
The key element in this process is optimal planning to assure that after no more than 4 hours after being taken out of the sea, our scallops are reaching the processing facility.
